Avocado Salsa Breakfast Burrito

We’re starting off the New Year with a healthy breakfast burrito recipe! I’m not a huge fan of breakfast burritos, to be totally honest, but this burrito is a winner! It takes about 5 minutes to throw together, makes a large serving, and takes a grand total of 4 ingredients! This is a very clean meal and is a great option for breakfast, or any meal, really!

Avocado Salsa Breakfast Burrito

Servings: 1 (2 burritos)

Amount per serving: 240 calories– 27g carbs– 12g fat (good fats)– 9g protein– 3g sugar

Ingredients:

  • 2 small corn tortillas
  • 1 egg- scrambled
  • 1/4 avocado
  • 2 tablespoons salsa or pico de gallo

Directions:

  1. Scramble your eggs
  2. Distribute the egg between the two tortillas and top with avocado slices and 1 tablespoon of salsa for each burrito.
  3. Roll up and enjoy!
