Cheese Stuffed Baby Peppers

I have a great appetizer/snack recipe for today! When I went to Panama City Beach for my Bachelorette party, we went to a small Tapas bar that served these amazing stuffed baby bell peppers. I decided that I just had make my own version! The ones at the Tapas bar are totally different and I fully intend on recreating those one day, but, until then, enjoy these yummy little finger foods!

Cheese Stuffed Baby Peppers

Servings: 2 (6 pieces per serving)

Amount per serving: 130 calories– 12g carbs—7g fat—4g protein—5g sugar

Ingredients

  • 6 baby bell peppers
  • ¼ cup Neufchatel cream cheese
  • 1 teaspoon chives
  • ½ tsp garlic powder
  • ¼ cup panko bread crumbs

Directions

  1. Preheat your oven to 350 degrees.
  2. Mix the cream cheese, chives, and garlic powder in a bowl.
  3. Fold the bread crumbs into the cream cheese mixture Image
  4. Cut the baby peppers in half and take out the seeds before filling with the cream cheese mixture. Image
  5. Bake for about 10 minutes or until you see the peppers start to brown!

These were so good! They were perfect as a side to a light entree or as an appetizer for your next party!
