Guiltless Shrimp Scampi

Ask anyone who knows me well: I love seafood! Crab, shrimp, lobster, fish—I love it all! A good Shrimp Scampi can’t be beat, either! Unfortunately, a good sized portion of Shrimp Scampi can be upwards of 500 calories! You can thank tablespoons of butter and oil for that. Red Lobster’s Shrimp Scampi ranges from 130-180 calories, but you get about 4 shrimp. Not ok!  I decided to create my own Shrimp Scampi recipe to eliminate all of those unnecessary calories without eliminating that great flavor!

Skinny Shrimp Scampi

Servings: 2 servings (10 shrimp per serving)

Amount per serving: 122 calories- 2g carbs- 7g fat- 13g protein

Ingredients:

  • 20 medium sized shrimp- peeled and de-tailed
  • 2 cloves garlic- minced
  • 1 tbs unsalted butter
  • 1/4 c 99% fat free chicken broth
  • 1 lemon- sliced into quarters
  • 1 tbs chopped chives (I used dried)
  • 1 tbs dried parsley

Directions

  1. In a large sauté pan, sauté the garlic over medium/low heat
  2. Once the garlic is a little browned, add the chicken broth and the shrimp. Image
  3. Cook the shrimp in the chicken broth until they turn pink
  4. Turn the burner off Drain the chicken broth from the shrimp
  5. Add the 1 tbs of butter and let it melt. Once melted, toss the shrimp in the butter.
  6. Add the juice from ½ of the lemon, chives, and parsley to the shrimp and stir. Image
  7. Serve with the rest of the lemon (1/4 lemon on each plate) and your favorite side (I’m serving it with broccoli tossed in my Low Calorie Garlic Butter Sauce—recipe for that tomorrow!) and enjoy!
