Healthy Chicken Parmesan

One of my husband’s favorite foods is Chicken Parmesan.  I make it every once in awhile and treat it as a cheat meal because it’s so high calorie! There’s so much cheese and pasta, it can really all add up! A friend of mine asked for me to make a healthy Chicken Parmesan recipe and, since my husband has been asking for me to make it, I decided why not do both!  The Chicken Parmesan I used to make ended up being around 650 calories and a dinner portion of Chicken Parmesan from Olive Garden is a whopping 1090 calories! This recipe is just over 300 calories—including the pasta!

Healthy Chicken Parmesan

Servings: 2

Amount per serving:  319 calories- 27g carbs- 8g fat- 30 g protein

Ingredients:

  • 2 chicken breasts (4 oz each)
  • 2 tbs Carrie’s Italian Seasoning (<– click here for that recipe!)
  • 2 tbs grated parmesan cheese
  • ½ cup spaghetti sauce (I used Prego’s Tomato Basil Garlic)
  • ¼  cup shredded mozzarella cheese
  • 2 oz (one serving) of angel hair pasta

Directions

  1. Preheat your oven to 350 degrees
  2. Lightly spray a baking pan (I used a bread pan-again) with non-stick cooking spray.
  3. Put both chicken breasts into your pan and cover each breast with 1tbs of Carrie’s Italian Seasoning and 1 tbs of grated parmesan cheese.Image
  4. Put the chicken in the oven and cook for 20-25 minutes or until the chicken isn’t pink in the middle.
    1. While the chicken is cooking, start cooking your pasta (this only takes about 15 minutes because angel hair is thin—just FYI!).

i.     While the pasta is cooking, warm your spaghetti sauce by stove top or microwave (I use the microwave because it takes about 1 minute—horrifying, I know!)

ii.     Once your pasta is done, mix 2tbs of the sauce into the spaghetti.

  1. When the chicken is done, turn the oven on warm—do not take out the chicken yet!
  2. Put the rest of the warmed sauce onto the chicken breasts, then sprinkle 1/8  c of mozzarella on top of each breast and put back into the warm oven until the cheese is melted.Image
  3. Take your finished pasta and put it on two plates. When the cheese is melted onto the chicken, place one breast on top of each pile of angel hair.
  4. Serve with your favorite vegetable and enjoy!

This turned out great! My husband said he couldn’t tell a difference between this recipe and the old recipe, so that’s a big accomplishment! If you like Italian food, this recipe is a MUST try!
