Healthy Peach Pie!

One of the great things about summer-time is all the fruit that is in season and on sale! I bought a bunch of peaches and decided to make a peach pie with it! This recipe is super easy! The average piece of peach pie can run you around 350 calories and 20 grams of sugar! This recipe has half the calories and just a fraction of that sugar count with the same delicious taste! You’ll be using my 5 Ingredient Pie Crust, except you’ll be making 1 ½ batches! I’ll post the measurements below to make it easy for everyone :)

I tagged this under Gluten Free because it can be made gluten free by changing the flour! If anyone GF makes this with a GF flour blend, please let me know how it tastes and what flour you used so I can add that as an option to the pie crust recipe! (With your permission and credit, of course!)

Healthy Peach Pie

Servings: 8

Amount per Serving: 167 calories- 25g carbs- 7g fat- 4g protein- 5g sugar

Ingredients:

For the crust (to see photos of this process, click here—modified directions are below)

  • 1 ½ c flour
  • ½ c cottage cheese
  • 4 ½ tbs unsalted butter
  • heaping ¼ tsp salt
  • 2 tbs splenda. (or other granulated sucralose sugar substitute)

For the filling

  • 2 medium peaches- diced
  • 1/2 c Splenda
  • 2 tbs Water
  • 2 tbs cornstarch dissolved into 1/2 c water
  • 1 tbs Splenda (for topping)

Directions:

  1. Make pie crust according to these directions,
    1.  HOWEVER:
      1.  use above measurements
      2.   set aside 1/3 of the crust dough before molding into the pie dish (for the pie crust topping),
      3.  and only bake for 5 minutes
  2. Take the crust out to cool and continue. Reduce the oven temperature to 350.
  3. In a sauce pan over medium heat, mix peaches, 2 tbs water, and ½ cup Splenda until the peaches break down and start to liquefy (the water will turn pinkish orange from the peaches). Don’t worry if it starts to boil a little bit! It will look something like this: 
  4. Add the water/cornstarch mixture and vanilla and stir until the filling becomes thick. This doesn’t take very long! 
  5. Pour the filling into the pie crust.
  6. This is the super fun part: roll out the remaining pie crust and, using a cookie cutter or knife of your choice, cut out shapes and place on the top of the filling until the pie is covered with whatever design you’d like! 
  7. Sprinkle the leftover 1 tbs of  Splenda over the top of the pie and bake for 7-9 minutes or until the crust turns slightly brown.
  8. Take the pie out of the oven and (attempt to—it smells amazing!) let it sit for about 10 minutes to let it cool and let the filling thicken back up.
  9. Serve and Enjoy!
