After a (very) long hiatus, I’ve decided to pick A Guiltless Glutton back up! Previously, I had tucked this blog away as a result of work and finishing up my Masters degree. Now that I’ve finished (hooray!) and gotten my first ever full time job (eep!), I have a nice little routine which allows me some extra time to blog again.
While on hiatus, I was still cooking. A lot, actually. I have a TON of new, healthy recipes to share with ya’ll!
My first post back? A skinny version of…wait for it… Longhorn’s Parmesan Crusted Chicken! Does it sound too good to be true? Of course it sounds that way, but it’s not! It’s real!
Instead of the 1000+ calorie version they give you at Longhorn (or the 700 calorie lunch portion), this recipe is…wait for it… 416 calories. You can thank me later ;)
